Born here, in the heart of the Pyrenean Mountains of the Ossau Valley, its name is “Hromatge”, pronounced “roumadgé”. Ewe’s, goat’s or mixed cheese (ewe/goat) of high origin, it is the silent witness to the art of farmhouse cheese making, the fruit of respect for the seasons, the daily care of the herds, preserved nature and the hand of man.

A pure ewe's milk, goat's milk or mixed cheese, weighing around 1.2 kg, engraved according to your choice, benefiting from a ripening technique through the center of the tomme. All our cheeses are matured for between 3 and 6 months in natural cellars, where their maturity reinforces their character.

Tasting tips

The tomme d’Ossau is a tomme with character, carrying the flavors of unspoiled nature and delicately selected raw milk. Its texture is firm yet supple, its taste balanced.  The aromas of its fine rind will take you on a journey to the heart of grassy, floral mountains.
To release them, remove your cheese from the fridge 30 minutes before tasting.

    Specially developed as an alternative to black cherry jam, L’Automnale is the perfect pair to goat’s cheese or Pyrénées’ sheeps with its crunchy walnut pieces.

    Local speciality, Jurançon and its delicate freshness will well fit to your cheeses and foie grs. The commune of Jurançon gave its name to Jurançon wine. Today, there are 125 hectares of vines in the 1350 hectares of the Jurançon Appellation d’Origine Contrôlée area. The “Cave des Producteurs de Jurançon” is in Gan, but Jurançon is actually produced in Jurançon.

Storage tips

All our cheeses are carefully wrapped in an attractive conservation paper.

Once received, place the cheese in the refrigerator in its original paper (ideally between 4 and 10°C).
After opening, the tomme will keep perfectly well (about 1 month) and continue to ageaing in its conservation paper. To preserve its suppleness, you can slip it into a freezer bag, still wrappen in its original paper.
